Ingredients
- 1 package firm tofu
- 1/4 cup soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 1 clove garlic, minced
- 1 cup cooked rice
- 1/2 cup steamed broccoli
- 1/2 cup sliced bell peppers
- 1/4 cup shredded carrots
- 2 tablespoons chopped green onions
Directions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Press the tofu to remove excess water and cut it into cubes.
- In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, cornstarch, and minced garlic.
- Place the tofu cubes in a shallow dish and pour the teriyaki sauce over it. Stir to coat the tofu evenly and let it marinate for 10-15 minutes.
- Transfer the marinated tofu to the prepared baking sheet, spreading it out in a single layer. Bake for 20-25 minutes, or until the tofu turns golden brown and crispy.
- While the tofu is baking, prepare the rice according to package instructions and steam the broccoli until tender.
