Vegan Tofu Stir-Fry

This vegan tofu stir-fry is a delicious and healthy option for any plant-based meal. Packed with flavors and nutrients, it is a quick and easy recipe perfect for busy weeknights.
Ingredients
- 14 oz (400g) firm tofu, drained and cubed
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, sliced
- 2 cups mushrooms, sliced
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp cornstarch
- 1/4 cup water
- Salt and pepper, to taste
- 1/4 cup chopped green onions, for garnish
Directions
- Heat sesame oil in a large pan or wok over medium heat.
- Add minced garlic and grated ginger. Sauté for a minute until fragrant.
- Add tofu cubes to the pan and cook for 5 minutes, flipping occasionally until lightly browned on all sides.
- Push tofu to one side of the pan and add bell pepper, broccoli, carrot, and mushrooms to the other side.
- Stir-fry vegetables for 5-7 minutes until they are tender-crisp.
- In a small bowl, whisk together soy sauce, hoisin sauce, cornstarch, and water.
- Pour the sauce into the pan and stir to coat all the ingredients.
- Season with salt and pepper to taste. Continue cooking for another 2-3 minutes until the sauce thickens.
- Serve the tofu stir-fry hot, garnished with chopped green onions. It pairs well with steamed rice or noodles.
