Ingredients
- 6 red bell peppers
- 1 tablespoon olive oil
- 1 carrot
- 1 onion
- 1 stalk celery
- 1 cup of water
- Garlic powder
- Dried oregano
- Sea salt
Directions
- Preheat the oven to 400 degrees convection.
- Roast the six red peppers until soft, about 20-30 minutes.
- Let the peppers cool entirely.
- Peel the skin off the peppers and remove the seeds and stems.
- Caramelize the chopped carrots, celery, and onions in a skillet while adding in the spices.
- Add roasted peppers and caramelized carrots, celery and onions into a mixing bowl.
- Pour in one cup of water.
- Use an immersion blender to mix everything together.
