Ingredients
FOR THE YOGURT
½ gallon whole milk
3 tablespoons plain yogurt with active live cultures .
FOR THE GRANOLA
½ cup extra-virgin olive oil
½ cup maple syrup 1 teaspoon ground
cinnamon
1 teaspoon kosher salt
TOPPINGS
4 strawberries, sliced
1 banana, sliced
1 tablespoon vanilla extract (optional)
½ cup honey (optional)
3 cups old-fashioned rolled oats
1 cup raw pumpkin seeds 1 cup raisins
½ cup blueberries
Directions
1. To make the yogurt: Pour the milk into the pot. Make
sure the pressure release valve is in the VENT position (this aids the milk cooking low and slow). Close the lid and move the slider to AIR FRY/STOVETOP. Select
YOGURT and set the time to 8 hours. Press START/STOP to begin. 2. After the milk has boiled, the display will read "Cool." Note that this process can take several hours. Once cooled, the unit will beep and display "Add & Stir." Allow the pressure to release naturally. Open the lid and skim the skin off the top of the milk and discard. Allow the milk to cool, stirring frequently, for about 5 minutes.
3. Add the yogurt to the pot and whisk until fully incorpo rated. Press START/STOP to continue cooking.4. After 8 hours, transfer the yogurt to a glass containerand chill for a minimum of 4 hours in the refrigerator.
5. To make the granola: While the yogurt chills, wipe the pot clean. In a large bowl, combine the olive oil, maple syrup, cinnamon, kosher salt, oats, pumpkin seeds, and raisins, then transfer to the pot.
6. Close the lid and move the slider to AIR FRY/ STOVETOP. Select BAKE/ROAST, set the temperature to 300°F, and set the time to 15 minutes (if a crunchier granola is desired, add 5 more minutes). Press START/ STOP to begin cooking.
7. When cooking is complete, open the lid and let the granola cool for at least 15 minutes. 8. Once the yogurt is chilled, add the vanilla and honey (if using). Serve with granola and the strawberries, banana, and blueberries.
