Ingredients
- Cookies:
- ¾ cup all-purpose flour
- ¾ cup graham cracker crumbs
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon ground cinnamon
- ½ cup unsalted butter, softened
- ¾ cup white sugar
- 1 large egg yolk
- ½ teaspoon vanilla extract
- Key Lime Cream Cheese Filling
- 1 package cream cheese
- 2 cups Whipped Cream
- ½ jar of Terrapin Ridge Farms Key Lime Pie Jelly
Directions
- Begin by preheating the oven to 375 degrees F (190 degrees C). Mix together the flour, graham cracker crumbs, baking soda, baking powder, and cinnamon in a bowl. Mix butter and 1/2 cup sugar together in a bowl with an electric mixer. Add egg yolk and vanilla to the butter and sugar mixture. Blend until combined. Mix in dry ingredients and continue to blend until dough sticks together. Create one-inch balls with the dough and coat in the leftover sugar. Place on the prepared baking sheets. Bake in the preheated oven until bottoms are lightly browned, ~ 6 to 7 minutes. Â Cool for at least 15 minutes before adding filling.
- Mix together Terrapin Ridge Farms Key Lime Pie Jelly, cream cheese and whipped cream. Spread filling on the flat sides of 1/2 of the cookies, then top with remaining cookies to form Key Lime Pie Cookie Sandwiches. You can also leave the cookies open face and put filling on all the cookies.
