Ingredients
- 2 tablespoons vegetable oil
- 1 block of firm tofu, cubed
- 4 garlic cloves, minced
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup snap peas, trimmed
- 4 green onions, sliced
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 2 tablespoons chili sauce
- 1 tablespoon rice vinegar
- 1 tablespoon agave syrup
- 200g rice noodles, cooked according to package instructions
- 1/4 cup roasted peanuts, chopped
- Fresh cilantro, for garnish
Directions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the tofu cubes and cook until golden and crispy, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
- Add the red bell pepper, carrot, snap peas, and green onions. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, hoisin sauce, chili sauce, rice vinegar, and agave syrup.
- Pour the sauce into the skillet and stir to coat the vegetables.
- Add the cooked rice noodles and crispy tofu to the skillet, tossing gently to combine everything together.
- Cook for an additional 2-3 minutes until heated through.
- Serve the spicy Asian tofu stir-fry with rice noodles hot, garnished with chopped peanuts and fresh cilantro.
