Ingredients
- 1 tablespoon coconut oil
- 1 block of tofu, cut into cubes
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1 medium carrot, sliced
- 1 can (13.5 oz) coconut milk
- 2 tablespoons green curry paste
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 cup vegetable broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Cooked rice, for serving
Directions
- Heat coconut oil in a large pan over medium heat. Add tofu cubes and sauté until golden brown on all sides. Remove and set aside.
- In the same pan, add onion and garlic. Sauté until onion is translucent.
- Add red and green bell peppers, broccoli, and carrot. Cook for a few minutes until vegetables are slightly tender.
- In a separate bowl, whisk together coconut milk, green curry paste, soy sauce, maple syrup, vegetable broth, salt, and pepper. Pour the mixture into the pan with the vegetables.
- Bring to a simmer and let it cook for about 10 minutes, or until the sauce thickens slightly.
- Return the tofu cubes to the pan and stir gently to coat them with the curry sauce. Cook for an additional 2-3 minutes to heat through.
- Serve the Thai tofu green curry over cooked rice, garnished with fresh cilantro.
